The working principle of the crude distillation tower is that the fermented mature mash enters the upper part of the crude distillation tower after preheating, and the heating steam is continuously and uniformly introduced into the bottom of the tower. At this time, the liquid alcohol in the mature mash can be converted into alcohol due to the heating effect. The gas and other low-boiling and volatile impurities become gaseous, and enter the aldehyde discharge tower together with the alcohol (or directly into the rectification tower), and the distilled waste residue is discharged out of the tower at the bottom of the tower.
 
When the crude distillation tower is in normal operation, the top temperature of the tower should not be lower than 93 °C, but it should not be too high. Generally controlled at 95-96 ℃. When the temperature is too low, the alcohol in waking up is not completely evaporated, and the escape rate increases significantly. The boiling point of pure alcohol is 78.3 °C, but the boiling point of mixed liquid mixed with water and other components is far more than 78.3 °C. Therefore, the bottom temperature of the crude distillation column should not be controlled below 105 °C, generally between 105 °C and 109 °C. The mature mash must be preheated before entering the crude distillation column to reduce the temperature difference, which is beneficial to the stable operation of the crude distillation column.
 
The working principle of the aldehyde removal tower is that after the alcohol in the mature mash is crudely distilled, it enters the aldehyde removal tower from the top of the crude distillation tower from the gaseous state. The low-boiling and volatile impurities such as aldehydes and esters are discharged from the aldehyde discharge pipe, the dealdehyde-free alcohol enters the liquid-phase rectification tower from the bottom of the aldehyde tower, and part of the wine head enters the mash or mature of the rear fermentation tank from the wine head pipe. Mash.
 
The working principle of the rectifying tower is that after the alcohol is distilled through the above two towers, the alcohol concentration needs to be further improved, and the impurities need to be further eliminated. The fusel oil is extracted, and the tail-level impurities are removed to obtain the finished product that meets the quality standard - alcohol.
